Lazy weekend: Couscous Salad - Finde relajado: Couscous Salad


Today is a glorious sunny and hot day. Looks like Lady Spring has decided to stay (such a relief). And since today is such a gorgeous day in Shanghai, there's no chance I will stay for long at home.

Weekends (sunny weekends) are supposed to be relaxing, calm and fun, days to chill with friends drinking chilled wine next to a pool. If that is not on your panorama because of weather forecast or lack of swimming pool (try your local City Hall fuente....) it doesn't matter. Today I strongly recommend you seize the day and go out. Have fun. Enjoy. Don't cook.

Well, maybe just fix a simple Couscous salad like this one, so easy to prepare, it will take you barely 15 min (max) to assemble it.

Simple Couscous Salad
yield: 2 persons

1 cup Couscous
1 cup vegetable stock or water
2 tbsp olive oil
1 red onion, halved, thinly sliced
1/3 cup of lemon juice
1/2 piece of lemon , roughly cut (skins on)
1/2 cup black olives
1/4 cup roughly chopped almonds
1/4 cup roughly chopped pistachios
1/4 cup raisins
1/4 cup fresh coriander, coarsely chopped
1/4 cup fresh parsley, coarsely chopped

In a saucepan (medium size) with a lid, bring the vegetables stock to a boil. Some people like to add olive oil and salt, but I prefer not to do it, since I will add those at the end.
When the vegetable stock begins to boil, remove from heat and add the couscous. Stir and cover saucepan. Let stand for 5 minutes to allow the couscous to absorb all the liquid. Stir lightly with a fork to fluff. Is best to use cold couscous on this recipe, so maybe you will need to wait other five minutes, go make yourself a mojito, caipirinha, michelada or moresque.

Now that's the hard part of the recipe, the rest is just throw the rest of the ingredients in a salad bowl and toss them together. Season with salt pepper. Use the lemon juice and the olive oil to taste. Serve with some greens on the side, and do not forget to tell me how it work out for you.

Hoy es un glorioso y soleado día. Al parecer la Sra. Primavera ha decidido quedarse (que alivio!). Y ya que es un día tan maravilloso en Shanghai, no hay posiblidad que que me quede por mucho tiempo en casa.

Fines de semana (soleados fondees) deben de ser relajantes, calmantes y divertidos, días para pasarla cool and chill con los amigos bebiendo un vinito frío alrededor de la piscina. Si ese no es tu panorama debido al pronostico del tiempo o por falta de piscina (intenta sustituir esta por la fuente de tu Zócalo..) no importa. Hoy les quiero recomendar disfrutar el día, salir. Divertirse. Cero cocina.

Bueno, tal vez un poquito. Justo lo suficiente para preparar una sencilla Ensalada de Couscous, fácil y rápida. Te llevara solo 15 minutos (máximo) prepararla.

Simple Ensalada de Couscous
rendimiento: 2 personas

1 taza de Couscous
1 taza de caldo de verduras o agua
2 cdas de aceite de oliva
1 cebolla morada, finamente picada
1/3 taza de jugo de limón
1/2 limón, cortado en trozos (con la piel)
1/2 taza de aceitunas negras
1/4 taza de almendras picadas
1/4 taza de pistaches picados
1/4 taza de pasitas
1/4 taza de cilantro fresco, picado
1/4 taza de perejil fresco, picado

En una olla (mediana) con tapa, llegar el caldo de vegetales a ebullición. Algunas personas les gusta agregar el aceite de oliva y sal en este momento a la receta, yo prefiero hacerlo hasta el final de la receta.
Cuando el caldo empiece a hervir, retirar del calor y añadir el couscous. Remover y cubrir con la tapa. Dejar reposar por 5 minutos para permitir que el couscous absorba su liquido. Remover ligeramente con un tenedor para que el couscous este esponjoso. Es recomendable dejar enfriar un poco el couscous para esta receta, así que hay que esperar otros 5 minutos, vayan y preparense un mojito, caipirinha, michelada o moresque.
Ahora esa fue la parte mas difícil de la receta, el resto es solo verter el resto de los ingredientes en un bowl de ensalada y mezclarlos. Sazonar con sal y pimienta. El jugo de limón y aceite de oliva son al gusto. Sirve con una mezcla de lechugas al lado.

Tienen alguna mejor idea de como preparar una ensalade de Couscous (seguro que si). No seas timido y cuentanoslo en la seccion de comentarios. *Soleadas* recetas de cocteles son bienvenidas.

Heide, quiero darte las gracias ya que he preparado esta tarde esta receta y me ha quedado de rechupete. Fue mi primera vez cocinando couscous y la verdad es que si hubiera sabido antes que facil era hacer esto lo hubiera empezado a hacer mucho antes.

Me han surgido miles de ideas de com combinarlo. muchas graica!
