sake at sakesan - ribs and Executive Chef - dumplings & spicy soup - baby back ribs - kabocha panna cotta -
frozen lemongrass mousse - yakitori & more sake -sake compressed nashi
We visited this Restaurant last year when it was recently opened and we left it with a muy buen sabor de boca...and probably 2 extra kilos each one of us. I haven´t being back to Sakesan and frankly I´m afraid to repeat the experience since I think that was one of the longest meals we ever had. Just remembering all we ate on just that single seat and I get tummy aches.
I went there visualizing clean in mouth, smooth, minimal japanese sushi. Sakesan is more into heavy, rich and delicious robatayaki: grilled specialties, teriyaki and tempura. We sampled a wide array of dishes and overall they were well executed but there were some almost outstanding ones like the Baby back ribs (with the best ever bbq sauce, a mellow, spicy concoction with notes of star anise and a smoky flavor at the end), Salmon miso (baked in hoba leaf with miso), Sakesan black cod (in Saykio miso) and a fatty fatty salt and pepper pork belly with sanso salt.
Special mention deserves Pastry Chef Tracy Wei (ex Zuma, Nobu) that re-creates a well balanced version of the old and tried cliché East-meets-West desserts. I loved the roasted kabocha panna cotta (chai tea gelée, Hokaido milk foam, chocolate dirt and hazelnut crispies), a feast of creaminess and subtile sweet notes, also noteworthy the sake compressed nashi (white peach, sake sorbet , matcha tea crumble and puffed rice) will help to finally have that minimal, clean palate that some of us tend to crave when channeling jap food.
